Method

Cake

  1. 1

    Preheat the Oven

Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.

  2. 2

    Mix Dry Ingredients

In a large bowl, whisk together the flour, baking powder, and salt.

  3. 3

    Cream Butter and Sugar

In another bowl, cream the softened butter and granulated sugar together until light and fluffy.

  4. 4

    Add Eggs and Flavorings

Add the eggs one at a time, mixing well after each addition. Then stir in the vanilla extract and limoncello.

  5. 5

    Combine Mixtures

Gradually add the dry ingredients to the wet mixture, alternating with the milk. Mix until just combined.

  6. 6

    Bake the Cakes

Pour the batter evenly into the prepared cake pans and bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.

  7. 7

    Cool

Allow the cakes to cool in the pans for 10 minutes, then transfer to wire racks to cool completely.

Mascarpone Filling

  1. 8

    Prepare the Filling

In a medium bowl, combine the mascarpone cheese, powdered sugar, and limoncello. Mix until smooth.

  2. 9

    Whip the Cream

In a separate bowl, whip the heavy cream until stiff peaks form.

  3. 10

    Fold Together

Gently fold the whipped cream into the mascarpone mixture until fully combined.

Strawberry Compote

  1. 11

    Cook the Strawberries

In a saucepan over medium heat, combine the sliced strawberries, granulated sugar, and lemon juice.

  2. 12

    Simmer

Cook for about 10 minutes, stirring occasionally, until the strawberries release their juices and the mixture thickens slightly.

  3. 13

    Cool

Remove from heat and let the compote cool to room temperature.

Assembly

  1. 14

    Layer the Cake

Once the cakes are completely cool, place one layer on a serving plate and spread half of the mascarpone filling on top.

  2. 15

    Add Compote

Spread half of the strawberry compote over the mascarpone filling.

  3. 16

    Finish Layering

Place the second cake layer on top and repeat the process with the remaining mascarpone filling and strawberry compote.

  4. 17

    Serve

Slice the cake and serve with any remaining strawberry compote on the side.
