For the Pickled Onions

Pickle the Onions
In a medium bowl, combine the apple cider vinegar, water, sugar, and salt. Stir until the sugar and salt are dissolved. Add the thinly sliced red onion to the bowl, ensuring they are completely submerged in the liquid. Cover and refrigerate for at least 30 minutes.

Make the Whipped Spicy Feta
In a food processor, combine crumbled feta cheese, softened cream cheese, Greek yogurt, red pepper flakes, lemon juice, and olive oil. Blend until smooth and creamy. Taste and adjust seasoning if necessary. Set aside.
For the Lamb Sliders

Prepare the Lamb Mixture
In a large bowl, combine ground lamb, minced garlic, chopped rosemary, salt, and black pepper. Mix gently until just combined. Avoid overmixing to keep the sliders tender.

Form the Sliders
Divide the lamb mixture into 8 equal portions and shape each portion into a small patty.

Toast the Brioche Buns
While the sliders are cooking, toast the brioche slider buns in a separate pan or in a toaster until golden brown.
Assemble the Sliders

Build the Sliders
Spread a generous amount of whipped spicy feta on the bottom half of each toasted brioche bun. Place the cooked lamb slider on top, followed by a spoonful of pickled onions and a handful of pea shoots. Top with the other half of the bun.

Serve the lamb sliders immediately with your favorite sides.
