Method

Cooking the Pasta

    Boil the Pasta

    In a large pot, bring salted water to a boil. Add the rigatoni and cook according to package instructions until al dente, usually about 10-12 minutes. Reserve 1 cup of pasta water and drain the rest.

Cooking the Sausage and Vegetables

    Cook the Sausage

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the Italian sausage, breaking it up with a wooden spoon. Cook until browned and cooked through, about 7-10 minutes.

    Add Vegetables

    Stir in the minced garlic and sliced red bell pepper. Cook for an additional 2-3 minutes until the peppers are tender.

    Cook the Broccoli Rabe

    Add the chopped broccoli rabe to the skillet. Cook for another 4-5 minutes, stirring occasionally, until the greens are wilted and tender.

Combining Ingredients

    Combine Pasta and Sauce

    Add the drained rigatoni to the skillet with the sausage and vegetables. Pour in the reserved pasta water and the remaining 2 tablespoons of olive oil. Stir to combine everything well.

    Add red pepper flakes, salt, and black pepper to taste. Mix thoroughly to ensure even coating.

    Add Cheese

    Remove from heat and stir in the grated Parmesan cheese until melted and creamy.

Serving

    Serve the Italian Sausage Rigatoni hot, garnished with additional Parmesan cheese and a sprinkle of red pepper flakes if desired.
