Potato Chips

Method

Preparation

  1. 1

    Wash and Slice Potatoes

Thoroughly wash the Russet potatoes under running water to remove any dirt. Using a sharp knife or mandoline, slice the potatoes into thin rounds (about 1/16 inch thick).

  2. 2

    Soak the Potato Slices

Place the potato slices in a large bowl of cold water and let them soak for at least 30 minutes. This removes excess starch and helps achieve a crispier texture.

Cooking

  1. 3

    Heat the Oil

In a large, deep frying pan or pot, pour in the vegetable oil. Heat it over medium-high heat until it reaches 350°F (175°C). You can use a thermometer to check the temperature, or drop a test slice of potato in; it should sizzle immediately.

  2. 4

    Dry Potato Slices

After soaking, drain the potato slices and pat them dry with paper towels to remove excess moisture. This will help prevent splattering when frying.

  3. 5

    Fry the Potato Chips

Carefully add the potato slices to the hot oil in small batches, making sure not to overcrowd the pan. Fry for about 2-3 minutes or until golden brown and crispy. Use a slotted spoon to remove the chips and transfer them to a paper towel-lined plate to drain excess oil.

  4. 6

    Season the Chips

While the chips are still hot, sprinkle them with salt, paprika, garlic powder, and black pepper to taste. Toss gently to evenly coat the chips with the seasonings.

Serving

  1. 7

    Serve the Chips

Once all batches are fried and seasoned, serve the potato chips warm. They can be enjoyed on their own or with your favorite dip.
