Chili Preparation

    Sauté Vegetables

    In a large pot, heat olive oil over medium heat. Add chopped onion, minced garlic, and diced bell pepper. Sauté until the vegetables are soft and translucent, about 5-7 minutes.

    Brown the Beef

    Add the ground beef to the pot, breaking it up with a spoon. Cook until browned, about 8-10 minutes.

    Add Spices

    Stir in the chili powder, cumin, salt, and black pepper. Cook for an additional 2 minutes to toast the spices.

    Add Tomatoes and Beans

    Pour in the canned diced tomatoes (with juices), kidney beans (drained and rinsed), and black beans (drained and rinsed). Stir to combine.

    Simmer the Chili

    Bring the mixture to a boil, then reduce heat to low. Cover and let simmer for 30-40 minutes, stirring occasionally.

    Prepare Toppings

    While the chili is simmering, prepare the toppings. Shred the cheddar-jack cheese and slice the scallions.

    Once the chili has thickened to your liking, remove from heat. Ladle into bowls and top with shredded cheddar-jack cheese and scallions.
