In a non-stick skillet, melt 1 tablespoon of butter over medium heat. Crack the eggs into the skillet and cook to your desired style: sunny-side up, scrambled, or over-easy. Season with salt and pepper to taste.

Make Pancakes
In a bowl, combine 1 cup of flour, 1 tablespoon of sugar, 2 teaspoons of baking powder, and a pinch of salt. In another bowl, whisk together 1 cup of milk, 1 egg, and 1 teaspoon of vanilla extract. Pour the wet ingredients into the dry and mix until just combined. Heat a skillet over medium heat and pour 1/4 cup of batter for each pancake, cooking until bubbles form, then flip and cook until golden brown.

Make French Toast
In a bowl, whisk together 1 egg, 1 cup of milk, 2 tablespoons of sugar, and 1 teaspoon of cinnamon. Dip each slice of bread into the mixture and let soak for a few seconds on each side. Heat a skillet over medium heat and melt some butter. Cook the soaked bread until golden brown on both sides.

Dice the potatoes and onion. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the potatoes and onion, season with salt, pepper, paprika, and garlic powder. Cook, stirring occasionally, until the potatoes are golden brown and tender, about 15-20 minutes.
