Guacamole

Prepare the Avocados
Cut the ripe avocados in half, remove the pit, and scoop the flesh into a mixing bowl.

Mash the Avocados
Use a fork or a potato masher to mash the avocados to your desired consistency (smooth or chunky).

Add Ingredients
Stir in lime juice, diced tomatoes, minced jalapeños, chopped cilantro, garlic powder, salt, and pepper until well combined.

Taste and Adjust
Taste the guacamole and adjust seasoning if necessary, adding more salt, lime juice, or jalapeños to taste.

Preheat the Oven
Preheat your oven to 350°F (175°C).

Prepare Pepitas
In a mixing bowl, combine raw pepitas with olive oil, smoked paprika, cumin, and salt. Toss until the pepitas are well coated.

Bake Pepitas
Spread the coated pepitas on a baking sheet in a single layer and bake for 10-12 minutes, or until they are golden and fragrant, stirring halfway through.
