Onion Gravy

Method

Meatloaf

  1. 1

    Prepare the Meatloaf Mixture

In a large mixing bowl, combine ground beef, ground pork, breadcrumbs, milk, egg, chopped onion, minced garlic, Worcestershire sauce, salt, and pepper. Mix until well combined.

  2. 2

    Shape and Grill the Meatloaf

Preheat the grill to medium heat. Shape the meat mixture into a loaf and place it on a piece of aluminum foil. Grill for approximately 45 minutes, or until the internal temperature reaches 160°F (70°C), flipping halfway through.

Mashed Potatoes

  1. 3

    Cook the Potatoes

In a large pot, add the peeled and cubed potatoes, cover with water, and bring to a boil. Cook until tender, about 15-20 minutes.

  2. 4

    Mash the Potatoes

Drain the potatoes and return them to the pot. Add butter, milk, salt, and pepper. Mash until smooth and creamy.

Braised Greens

  1. 5

    Sauté the Garlic

In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.

  2. 6

    Cook the Greens

Add chopped collard greens or kale to the skillet. Pour in vegetable broth, add salt and red pepper flakes. Stir well and cover. Cook for about 15-20 minutes until the greens are tender.

Onion Gravy

  1. 7

    Prepare the Onions

In a saucepan, melt butter over medium heat. Add sliced onion and cook until caramelized, about 10-15 minutes.

  2. 8

    Make the Gravy

Sprinkle flour over the onions and stir to coat. Gradually add beef broth, stirring continuously until the gravy thickens. Season with salt and pepper.
