Method
Marinate Chicken
- 1
Prepare the Marinade
In a bowl, mix together olive oil, chili powder, cumin, garlic powder, salt, and black pepper.
- 2
Marinate the Chicken
Place the chicken breasts in a zip-top bag or shallow dish and pour the marinade over them. Ensure the chicken is well coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes or up to 2 hours.
Grill Chicken
- 3
Preheat the Grill
Preheat your grill to medium-high heat (about 375°F to 450°F).
- 4
Grill the Chicken
Remove the chicken from the marinade and discard any remaining marinade. Grill the chicken for 6-7 minutes per side or until the internal temperature reaches 165°F (75°C).
- 5
Rest and Slice
Once cooked, remove the chicken from the grill and let it rest for 5 minutes before slicing it into thin strips.
Assemble Tacos
- 6
Warm the Tortillas
If desired, warm the flour tortillas on the grill for about 30 seconds on each side or until soft and pliable.
- 7
Assemble the Tacos
Lay a tortilla flat, add a portion of sliced grilled chicken, sprinkle with cheddar-jack cheese, and top with shredded lettuce. Fold the tortilla over to enclose the filling.
- 8
Serve
Serve the tacos immediately with your favorite salsa or hot sauce if desired.
