Fried Chicken

Marinate the Chicken
In a large bowl, combine chicken thighs and buttermilk. Ensure all pieces are well-coated. Cover and refrigerate for at least 2 hours, preferably overnight.

Prepare the Flour Mixture
In another bowl, mix together flour, paprika, garlic powder, onion powder, salt, and black pepper.

Heat the Oil
In a large, heavy-bottomed pot or deep fryer, heat vegetable oil to 350°F (175°C).

Coat the Chicken
Remove chicken from buttermilk and let excess drip off. Dredge each piece in the flour mixture until well-coated.

Fry the Chicken
Carefully add the chicken pieces to the hot oil in batches. Fry for about 10-12 minutes or until golden brown and cooked through. Use a meat thermometer to ensure internal temperature reaches 165°F (74°C).

Drain the Chicken
Once cooked, remove chicken from oil and place on a wire rack or paper towel-lined plate to drain excess oil.

In a large bowl, whisk together flour, baking powder, sugar, and salt.

Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are okay.

Preheat your waffle iron according to manufacturer instructions. Pour an appropriate amount of batter onto the waffle iron and cook until golden brown, about 5 minutes.
