In a mixing bowl, crack the eggs and add the milk, vanilla extract, ground cinnamon, and a pinch of salt. Whisk together until well combined and frothy.

Take each slice of the thick bread and dip it into the egg batter, ensuring both sides are well-coated. Allow excess batter to drip off.

In a large skillet or griddle, melt the butter over medium heat until it is bubbly and begins to brown slightly.
