Omelette

    Prepare the Omelette Mixture

    In a bowl, crack the eggs and whisk them together with salt and black pepper until fully combined.

    Add Corn and Cheese

    Fold in the grilled corn, diced scallions, and shredded pepper-jack cheese into the egg mixture.

    Cook the Omelette

    In a non-stick skillet over medium heat, pour in the omelette mixture and let it cook until the edges start to set. Gently lift the edges with a spatula and let the uncooked eggs flow to the edges.

    Add Jalapenos

    Once the omelette is almost set, sprinkle the pickled jalapenos on top. Fold the omelette in half and cook for another 1-2 minutes until fully set.

    Prepare the Potatoes

    Wash and peel the potatoes. Cut them into small cubes.

    Cook the Home Fries

    Heat olive oil in a skillet over medium-high heat. Add the potato cubes and cook until golden brown, about 10-15 minutes, stirring occasionally.

    Season the Fries

    Once the potatoes are cooked, sprinkle with Tajín seasoning, garlic powder, and paprika. Stir well to coat the potatoes evenly and cook for another 2-3 minutes.
