    Prepare the Chicken

    In a large pot, melt 1 tablespoon of butter over medium heat. Add the chicken breast and cook until browned on both sides, about 5-7 minutes. Remove from pot and set aside.

    Chop Vegetables

    While the chicken is cooking, dice the onion, garlic, and potatoes into small cubes. Set aside.

    Sauté Vegetables

    In the same pot, add the remaining tablespoon of butter. Once melted, add the diced onion and garlic. Sauté until the onion is translucent, about 3-5 minutes.

    Add Potatoes and Corn

    Add the diced potatoes and frozen corn to the pot. Stir to combine with the onion and garlic.

    Add Chicken Broth

    Pour in the chicken broth and bring the mixture to a boil. Once boiling, reduce the heat to a simmer. Cook until the potatoes are tender, about 15 minutes.

    Shred Chicken

    While the soup is simmering, shred the cooked chicken breast into bite-sized pieces.

    Combine Chicken and Cream

    Add the shredded chicken back into the pot along with heavy cream, salt, black pepper, and thyme. Stir well to combine and let simmer for an additional 5 minutes.

Serving

    Garnish and Serve

    Chop the green onions and sprinkle on top of the chowder before serving. Enjoy your delicious chicken corn chowder!
