Hush Puppies
Lemon & Old Bay Remoulade
Method
Hush Puppies
- 1
Prepare the Batter
In a large mixing bowl, combine the cornmeal, all-purpose flour, baking powder, salt, and sugar. Mix well to ensure the dry ingredients are evenly distributed.
- 2
Mix Wet Ingredients
In a separate bowl, whisk together the buttermilk and egg until smooth. Gradually add this mixture to the dry ingredients and stir until just combined.
- 3
Add Crab and Green Onions
Gently fold in the blue crab meat and finely chopped green onions into the batter, being careful not to break the crab meat too much.
- 4
Heat the Oil
In a deep frying pan or pot, heat the oil over medium-high heat until it reaches 350°F (175°C) or when a small drop of batter sizzles upon contact.
- 5
Fry the Hush Puppies
Using a tablespoon, carefully drop spoonfuls of the batter into the hot oil. Fry in batches to avoid overcrowding. Cook for about 3-4 minutes or until golden brown. Remove with a slotted spoon and drain on paper towels.
