Preparation of Ahi Tuna

Prepare the Ahi Tuna
Using a sharp knife, dice the Ahi tuna into small cubes, about 1/2 inch in size. Place the diced tuna in a medium bowl.

Marinate the Tuna
Pour the lime juice over the diced Ahi tuna. Ensure all pieces are well coated. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the tuna to 'cook' in the lime juice.
Mixing the Ceviche

Prepare the Cilantro
While the tuna is marinating, wash the cilantro thoroughly under running water. Pat dry and chop finely.

Combine Ingredients
After the marination time is up, remove the bowl from the refrigerator. Add the chopped cilantro, diced avocado, and pico de gallo to the marinated tuna. Gently mix everything together, being careful not to mash the avocado.

Transfer the ceviche mixture to a serving bowl. Serve chilled with corn tortilla chips on the side for dipping.
