Batter

Method

Batter

  1. 1

    Preheat and prepare pan

Preheat oven to 350°F (175°C). Lightly grease a 9x5-inch loaf pan (or equivalent) with 1 tablespoon butter and line with parchment if desired for easy removal.

  2. 2

    Mix dry ingredients

In a medium bowl, whisk together 1.5 cups all-purpose flour, 0.25 cups granulated sugar, 2 teaspoons baking powder, and 0.5 teaspoon salt until evenly combined.

  3. 3

    Combine wet ingredients

In a separate large bowl, whisk 1 cup whole milk with 2 large eggs until smooth. Whisk in 3 tablespoons melted unsalted butter and 1 teaspoon vanilla extract until incorporated.

  4. 4

    Combine wet and dry

Pour the dry ingredients into the wet ingredients. Gently fold with a spatula or whisk just until no large streaks of flour remain; a few small lumps are okay. Do not overmix to keep the batter tender.

  5. 5

    Transfer to pan

Scrape the batter into the prepared loaf pan, smoothing the top with a spatula so it will bake evenly.

Bake & finish

  1. 6

    Bake

Bake in the preheated 350°F (175°C) oven for 40–50 minutes, or until the top is golden and a toothpick inserted into the center comes out clean or with just a few moist crumbs. If the top is browning too quickly, tent loosely with foil for the last 10–15 minutes.

  2. 7

    Cool

Remove the pan from the oven and set it on a wire rack. Let the loaf cool in the pan for 10–15 minutes, then lift it out (using parchment if used) and cool completely on the rack for at least 30 minutes before slicing.

  3. 8

    Finish and serve

Once cooled, dust the top lightly with 2 tablespoons powdered sugar and serve with 1/2 cup fresh berries on the side or piled on top. Slice and enjoy.
