Hot Honey Syrup (makes ~6 oz)
Method
Hot Honey Syrup
Combine honey and water in a small saucepan over medium-low heat. Stir until honey fully dissolves and mixture is just simmering (do not boil aggressively).
Add red chili flakes and smoked paprika, reduce heat to low and simmer gently for 3–4 minutes to infuse heat and smoke into the syrup.
Remove from heat and allow mixture to cool to room temperature, steeping for 15–20 minutes for a stronger chile flavor if desired.
Strain the syrup through a fine-mesh sieve to remove solids. Transfer to a clean bottle and refrigerate. Syrup will keep 2–3 weeks refrigerated.
Cocktail Assembly
Add 2 oz Dobel Blanco tequila, 1 oz blood orange–passion fruit juice, 0.5 oz fresh lime juice and 0.75 oz hot honey syrup into the shaker (with the pre-shaken egg white foam if you used egg).
Fill the shaker with fresh ice and shake vigorously for 12–15 seconds until well-chilled and slightly frothy.
Double-strain into the prepared chilled coupe or rocks glass (over fresh large ice if preferred for a rocks presentation).
Garnish with a blood orange wheel on the rim and a light dusting of flaky sea salt or a single chili flake on the foam for contrast.
Serve immediately. Sip and enjoy the balance of bright citrus, tropical passion fruit, gentle heat and honeyed sweetness balanced by tequila and lime.
