    Sauté the Aromatics

    In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

    Cook the Collard Greens

    Add the chopped collard greens to the pot, stirring to combine with the onions and garlic. Pour in the vegetable broth and bring to a simmer.

    Season the Greens

    Stir in the apple cider vinegar, sugar, salt, black pepper, and red pepper flakes. Mix well.

    Slow Cook

    Reduce the heat to low, cover the pot, and let the greens simmer for about 45 minutes to 1 hour, or until they are tender and flavorful.
