Prepare the Onions
Thinly slice the medium onion. In a skillet over medium heat, melt 1 tablespoon of butter. Add the sliced onions, sprinkle with a pinch of salt, and sauté until they are caramelized and golden brown, about 10-15 minutes. Stir occasionally to prevent burning. Once done, set aside.
Form the Patties
In a mixing bowl, combine 1 pound of ground beef with 1 teaspoon of salt and 1 teaspoon of black pepper. Mix gently until just combined, then form into two equal-sized patties, about 1/2 inch thick.
Cook the Patties
In the same skillet used for the onions, add another tablespoon of butter. Increase heat to medium-high and cook the patties for about 4-5 minutes on each side, or until they reach your desired doneness. Place a slice of Swiss cheese on each patty during the last minute of cooking to allow it to melt.
Assemble the Patty Melt
On two slices of rye bread, place one patty with melted cheese and top with the caramelized onions. Cover with another slice of rye bread to form a sandwich.
Serve
Once both sides are golden and the cheese is gooey, remove the sandwiches from the skillet. Cut in half and serve hot.
