Prepare the Pork
Season the pork chops with salt and black pepper on both sides.

Sear the Pork
In a large skillet, heat the vegetable oil over medium-high heat. Add the seasoned pork chops and sear them for about 3-4 minutes on each side until golden brown. Remove from the skillet and set aside.

Make the Sauce
Add the chicken broth, soy sauce, and brown sugar to the skillet. Stir to combine and bring to a simmer.

Thicken the Sauce
In a small bowl, mix the cornstarch with a few tablespoons of water to create a slurry. Stir this into the sauce and let it simmer until thickened, about 2-3 minutes.

Combine and Cook
Return the pork chops to the skillet, spooning the sauce over them. Cover and let them simmer for an additional 10 minutes until cooked through.

Serve the smothered pork over rice, alongside a corn, cucumber, and tomato salad, and with a dinner roll.
