Seafood and Broth

Method

Cooking Instructions

  1. 1

    Prepare the Broth

In a large pot, bring the water or fish stock to a boil. Add the chopped lemongrass and sliced galangal to the pot.

  2. 2

    Cook the Seafood

Once the broth is boiling, add the river prawns, barramundi, squid, clams, and mussels. Reduce the heat to a simmer and cook for about 5-7 minutes or until the seafood is cooked through.

  3. 3

    Season the Soup

Add the sliced chilis, fish sauce, and lime juice to the pot. Stir well and let it simmer for another 2-3 minutes.

  4. 4

    Finish with Herbs

Remove the pot from heat and stir in the chopped cilantro and Thai basil leaves just before serving.

  5. 5

    Serve

Ladle the soup into bowls and garnish with additional herbs if desired. Serve hot.
