Preheat the Oven

Preheat your oven to 220°C (425°F).

Sauté the Mushrooms

In a skillet, heat the olive oil over medium heat. Add the shiitake and king oyster mushrooms and sauté for about 5-7 minutes until they are tender. Season with salt and pepper.

Prepare the Mornay Sauce

In a saucepan, melt 2 tablespoons of butter. Stir in 2 tablespoons of flour and cook for 1-2 minutes. Gradually whisk in 1 cup of milk and continue to cook until the sauce thickens. Add the shredded Gouda cheese and stir until melted.

Assemble the Flatbreads

Spread the Gouda mornay sauce evenly over each flatbread. Evenly distribute the sautéed mushrooms on top. Sprinkle grated Parmigiano-Reggiano over the flatbreads.

Bake the Flatbreads

Place the flatbreads on a baking sheet and bake in the preheated oven for 10-12 minutes until the cheese is bubbly and the edges are golden.

Finish with Truffle Oil

Remove the flatbreads from the oven and drizzle with truffle oil before slicing and serving.
