    Wash and Prepare Potatoes

    Thoroughly wash the Russet potatoes under cold running water to remove any dirt. Peel the potatoes if desired.

    Slice the Potatoes

    Using a mandoline slicer or a sharp knife, slice the potatoes into thin, even rounds (about 1/8 inch thick) to ensure they cook uniformly.

    Soak Potato Slices

    Place the potato slices in a bowl of cold water and let them soak for at least 30 minutes. This helps remove excess starch and results in crispier chips.

Cooking

    Heat the Oil

    In a large, heavy-bottomed pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer for accuracy.

    Dry the Potatoes

    After soaking, drain the potato slices and pat them dry with a clean kitchen towel or paper towels to remove excess moisture.

    Fry the Potato Slices

    Carefully add a handful of potato slices to the hot oil, being careful not to overcrowd the pot. Fry for about 3-4 minutes or until the chips are golden brown and crispy.

    Remove and Drain

    Using a slotted spoon, remove the chips from the oil and place them on a plate lined with paper towels to absorb excess oil.

    Season the Chips

    While the chips are still warm, sprinkle them with salt and any optional seasonings to taste, tossing gently to coat evenly.

    Repeat the Process

    Continue frying the remaining potato slices in batches until all are cooked. Adjust the heat as needed to maintain the oil temperature.
