Preparation of Ingredients

1. Prepare the Greens

Rinse the organic mixed greens thoroughly under cold water. Spin dry in a salad spinner or pat dry with paper towels. Place the greens in a large salad bowl.

2. Chop the Vegetables

Dice the Roma tomatoes into bite-sized pieces and add them to the bowl with the greens. Slice the red onion thinly and add it to the bowl. Peel the jicama and cut it into thin strips or small cubes, then add to the salad.

Cooking the Bacon

3. Cook the Bacon

In a skillet over medium heat, cook the local bacon slices until crispy, about 5-7 minutes. Once cooked, remove from the skillet and drain on paper towels. Once cooled, crumble the bacon into small pieces and add it to the salad bowl.

Assembling the Salad

4. Add the Cheese and Croutons

Sprinkle the cotija cheese evenly over the salad. Add the cornbread croutons on top.

5. Toss the Salad

Gently toss all the ingredients together in the bowl until well combined. Serve immediately.
