    Sauté the Onions and Mushrooms

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onions and sauté until they become translucent, about 5 minutes. Stir in the sliced mushrooms and continue to cook for another 5 minutes until they are soft and browned. Season with salt, black pepper, and garlic powder. Remove the mixture from the skillet and set aside.

    Cook the Impossible Meat

    In the same skillet, add the remaining tablespoon of olive oil. Increase the heat to medium-high and add the Impossible meat. Cook for about 5-7 minutes, breaking it apart with a spatula until it is browned and cooked through. Season with additional salt and black pepper if desired.

    Combine Ingredients

    Once the Impossible meat is cooked, return the sautéed onions and mushrooms to the skillet and mix them with the meat. Allow the mixture to heat through for another 2-3 minutes.

    Melt the Cheese

    Turn off the heat and lay the slices of white American cheese over the top of the mixture. Cover the skillet with a lid and let it sit for a couple of minutes until the cheese is melted.

    Prepare the Sandwiches

    Slice the sub sandwich rolls in half and lightly toast them if desired. Spoon the cheesesteak mixture generously into each roll. Drizzle with hot sauce to taste before serving.
