Turkey Preparation

Prepare the Turkey
Preheat your oven to 325°F (163°C). Remove the giblets from the turkey and pat it dry with paper towels.

Season the Turkey
Rub the entire turkey with olive oil, then generously season it inside and out with salt, black pepper, garlic powder, onion powder, rosemary, and thyme.

Roast the Turkey
Place the turkey breast side up on a roasting rack in a large roasting pan. Roast in the preheated oven for about 13-15 minutes per pound, or until the internal temperature reaches 165°F (74°C). This will take approximately 3 to 4 hours for a 12-14 lb turkey.

Let it Rest
Once the turkey is done, remove it from the oven and let it rest for at least 30 minutes before carving. This helps the juices redistribute.

Shred the Turkey
Once cooled slightly, use your hands or forks to pull the meat apart into shreds.

Prepare the Bread
Take the slices of bread and lightly toast them if desired.

Add Mayonnaise
Spread a generous amount of mayonnaise on one side of each slice of bread.

On one slice of bread, layer pulled turkey, provolone cheese, lettuce leaves, slices of tomato, and onion slices.

Top with another slice of bread, mayonnaise side down, to complete your sandwich.
