    Roast the vegetables

    Preheat your grill or oven to a high heat. Place the Roma tomatoes, red onion (cut into quarters), whole garlic cloves, and jalapeño pepper on the grill or in a roasting pan. Roast for about 10-15 minutes, turning occasionally, until the vegetables are charred and soft.

    Cool and chop

    Once the vegetables are roasted, remove them from the grill or oven and let them cool slightly. Once cool enough to handle, chop the tomatoes and red onion into small pieces. Remove the seeds from the jalapeño (if desired for less heat) and chop it finely.

    In a mixing bowl, combine the chopped tomatoes, red onion, jalapeño, and roasted garlic (squeeze the cloves out of their skins). Add the chopped cilantro to the mixture.
