    Prepare the Chicken

    Season the chicken breasts with salt and black pepper. Heat 1 tablespoon of olive oil in a grill pan over medium-high heat. Grill the chicken for about 5-7 minutes on each side or until fully cooked and the internal temperature reaches 165°F (75°C). Remove from the pan and let it rest for a few minutes before slicing it into thin strips.

    Sauté the Vegetables

    In the same grill pan, add the remaining tablespoon of olive oil. Sauté the sliced onions and mushrooms over medium heat until they are softened and golden brown, about 5-6 minutes. Add the sliced hot or sweet peppers and cook for an additional 3-4 minutes until they are tender.

    Combine Chicken and Vegetables

    Add the sliced grilled chicken to the pan with the sautéed vegetables. Stir to combine and heat through for about 2-3 minutes.

    Add Cheese

    Place the provolone cheese slices over the chicken and vegetable mixture. Cover the pan with a lid and let it cook for another 2-3 minutes until the cheese melts.

    Serve

    Split the hoagie rolls lengthwise, and fill each roll with the chicken and cheese mixture. Serve hot, and enjoy your delicious chicken cheesesteak!
