Method
Crust Preparation
- 1
Prepare the crust
Preheat your oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until the mixture resembles wet sand.
- 2
Form the crust
Press the crumb mixture firmly into the bottom of a 9-inch springform pan, ensuring it is evenly distributed. Bake for 8-10 minutes until golden brown. Remove from the oven and let it cool.
Cheesecake Filling Preparation
- 3
Prepare the filling
In a large mixing bowl, beat softened cream cheese with a hand mixer until smooth and creamy. Gradually add granulated sugar, sour cream, and vanilla extract, mixing until well combined.
- 4
Add eggs
Add eggs one at a time, mixing on low speed after each addition until just combined. Be careful not to overmix.
- 5
Incorporate flour
Sift in the all-purpose flour and mix until just incorporated. Pour the cheesecake filling into the cooled crust.
Baking the Cheesecake
- 6
Bake the cheesecake
Place the cheesecake in the preheated oven and bake for 50-60 minutes or until the edges are set and the center is slightly jiggly. Turn off the oven and let the cheesecake cool in the oven with the door ajar for about 1 hour.
- 7
Chill
After the cheesecake has cooled, refrigerate for at least 4 hours or overnight for the best results.
Topping Preparation
- 8
Prepare the topping
In a small bowl, combine sliced strawberries, granulated sugar, and lemon juice. Toss gently and let sit for about 15 minutes to macerate.
- 9
Serve
Once the cheesecake is chilled, remove it from the springform pan, slice, and top with the macerated strawberries before serving.
