    Marinate the Chicken

    In a large bowl, combine olive oil, minced garlic, lemon juice, chopped rosemary, salt, and black pepper. Add the chicken thighs and coat them well. Cover and let marinate for at least 30 minutes (or up to 2 hours for more flavor).

    Prepare the Vegetables

    While the chicken is marinating, wash and cut the bell peppers, zucchini, and red onion into bite-sized pieces. Set aside.

    Prepare the Campfire

    Build a campfire and allow the flames to die down until you have hot coals. You can also use a grill if you prefer.

    Cook the Chicken

    Place the marinated chicken thighs on a grill grate or a piece of aluminum foil over the hot coals. Cook for about 6-8 minutes on each side, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).

    Cook the Vegetables

    During the last 5 minutes of cooking the chicken, add the prepared vegetables to the grill or foil. Cook until they are tender and slightly charred, about 5-7 minutes.

    Once the chicken and vegetables are cooked, remove them from the heat and let them rest for a few minutes. Serve hot, optionally with additional lemon wedges.
