Cajun Grilled Shrimp

Prepare the Marinade
In a large bowl, combine olive oil, Cajun seasoning, minced garlic, lemon juice, salt, and black pepper. Mix well to create a marinade.

Marinate the Shrimp
Add the peeled and deveined shrimp to the marinade. Toss until all the shrimp are evenly coated. Cover and refrigerate for at least 30 minutes.

Preheat the Grill
Preheat your grill to medium-high heat, approximately 400°F (200°C).

Grill the Shrimp
Thread the marinated shrimp onto skewers. Grill the shrimp for about 2-3 minutes per side, or until they are pink and opaque.
Mango Salsa

Combine Ingredients
In a medium bowl, mix together diced mango, chopped red onion, diced red bell pepper, and chopped cilantro.

Add Lime Juice and Salt
Drizzle lime juice over the salsa mixture and sprinkle with salt. Toss gently to combine.

Chill the Salsa
Cover and refrigerate for at least 15 minutes to allow the flavors to meld.
Cilantro Lime Rice

Cook the Rice
In a medium saucepan, combine water and rice. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes or until the rice is tender and water is absorbed.

Stir in the chopped cilantro, lime juice, and salt into the rice until well incorporated.
