Make the Pasta Dough
In a large bowl, mix the flour and salt. Create a well in the center, add the eggs, and mix until a dough forms. Knead on a floured surface for about 10 minutes until smooth. Wrap in plastic wrap and let rest for 30 minutes.

Prepare the Filling
In a bowl, combine ricotta, Point Reyes Toma cheese, roasted eggplant, salt, pepper, and chopped basil. Mix until well combined.

Assemble the Tortelli
Roll out the pasta dough thinly. Cut into squares. Place a spoonful of filling in the center of each square. Fold and seal the edges. Boil in salted water for about 3-4 minutes until they float.

Plate the tortelli, top with peperonata sauce, and garnish with additional basil if desired.
