    Make the Pasta Dough

    In a large bowl, mix the flour and salt. Create a well in the center, add the eggs, and mix until a dough forms. Knead on a floured surface for about 10 minutes until smooth. Wrap in plastic wrap and let rest for 30 minutes.

Filling

    Prepare the Filling

    In a bowl, combine ricotta, Point Reyes Toma cheese, roasted eggplant, salt, pepper, and chopped basil. Mix until well combined.

Peperonata Sauce

    Make the Peperonata

    In a skillet, heat olive oil over medium heat. Add onion and garlic, sautéing until translucent. Add bell peppers, salt, pepper, and balsamic vinegar. Cook until peppers are soft, about 15 minutes. Set aside.

Assembly

    Assemble the Tortelli

    Roll out the pasta dough thinly. Cut into squares. Place a spoonful of filling in the center of each square. Fold and seal the edges. Boil in salted water for about 3-4 minutes until they float.

    Plate the tortelli, top with peperonata sauce, and garnish with additional basil if desired.
