Preparing the Steak

    Cook the Wagyu

    Season the Snake River Wagyu steak with salt and let it come to room temperature. Heat a skillet over medium-high heat, add a drizzle of olive oil, and sear the steak for about 4-5 minutes on each side for medium-rare. Remove from heat and let rest.

Making the Sweet Onion Nori Puree

    Blend Ingredients

    In a saucepan, sauté the chopped sweet onion in olive oil until soft and translucent. Add nori sheets and cook for an additional 2 minutes. Transfer to a blender, add salt, and blend until smooth.

Preparing the Fresh Wasabi Jus

    Combine Ingredients

    In a small saucepan, combine beef stock, soy sauce, and mirin. Bring to a simmer, then grate fresh wasabi root into the mixture. Let simmer for 5 minutes to meld flavors.

Cooking the Chanterelles

    Sauté Mushrooms

    In a separate pan, sauté chanterelle mushrooms in a bit of olive oil over medium heat until golden brown and tender, about 5-7 minutes.

Plating

    Serve the Dish

    Slice the rested Wagyu steak. On a plate, spread a generous amount of sweet onion nori puree, place the sliced steak on top, and artfully arrange the sautéed chanterelles. Drizzle the fresh wasabi jus around the plate.
