Oyster Preparation

    Prepare the Oysters

    Shuck the fresh oysters and place them in a bowl. Ensure to reserve the oyster liquor.

    Make the Batter

    In a large bowl, mix the cornmeal, flour, baking powder, salt, and black pepper. In another bowl, whisk together the egg and water. Combine the wet ingredients with the dry ingredients until just mixed.

    Batter the Oysters

    Dip each oyster into the batter, ensuring they are fully coated.

    Fry the Oysters

    Heat oil in a deep pan over medium-high heat. Fry the battered oysters until golden brown and crispy, approximately 2-3 minutes per side. Remove and drain on paper towels.

Calamansi Aioli

    Prepare the Aioli

    In a bowl, mix together the mayonnaise, calamansi juice, minced garlic, and salt until smooth. Adjust seasoning to taste.

Assembly

    Plate the Dish

    On a serving plate, place the fried oysters, drizzle with calamansi aioli, and garnish with ginger blossoms.
