Pulled Pork Preparation

Cook the Pork
In a slow cooker, combine pork shoulder, onion powder, garlic powder, smoked paprika, salt, pepper, and apple cider vinegar. Cook on low for 8 hours or until the pork is tender and shreds easily.

Prepare the Onions
Slice the onion into thin rings. Soak in buttermilk for at least 30 minutes.

Coat and Fry
In a bowl, mix flour, cornstarch, salt, and pepper. Dredge the soaked onion rings in the flour mixture, then fry in hot oil until golden and crispy. Drain on paper towels.
BBQ Mayo Preparation

Mix the Sauce
In a small bowl, combine mayonnaise and BBQ sauce. Mix well and set aside.
Assembling Tacos

Warm the corn tortillas in a skillet. Fill each tortilla with a generous portion of pulled pork, top with crispy onion tanglers, drizzle with BBQ mayo, and garnish with cilantro. Serve with lime wedges.
