Cook the Rice

Rinse the basmati rice under cold water until the water runs clear. In a pot, combine 1 cup of rice with 2 cups of water and a pinch of salt. Bring to a boil, then reduce to low heat, cover, and simmer for 15-20 minutes until water is absorbed. Fluff with a fork and set aside.

Sauté the Vegetables

In a large skillet, heat a tablespoon of olive oil over medium heat. Add chopped onions and sauté until translucent, about 3 minutes. Add bell peppers, broccoli, cauliflower, and mushrooms. Sauté for another 5-7 minutes until vegetables are tender.

Add Beans and Corn

Stir in black beans and corn into the skillet with the sautéed vegetables. Cook for an additional 3-4 minutes until heated through.

Assemble the Bowl

In serving bowls, place a scoop of cooked basmati rice, then top with the sautéed vegetable and bean mixture. Add diced fresh tomatoes, salsa, and guacamole on top.
