Preparing the Cheesecake Filling

Mix the Filling
In a large mixing bowl, beat together the cream cheese, granulated sugar, and vanilla extract until smooth. Add eggs one at a time, mixing well after each addition. Divide the mixture into three equal parts.

Flavor the Filling
To one part, fold in the apple pie filling and cinnamon for the Caramel Apple flavor. To the second part, mix in the chocolate chips for the Chocolate Chip flavor. To the third part, fold in the mixed berries for the Berry flavor.
Assembling and Frying

Fill the Tortillas
Lay out each flour tortilla and spoon a generous amount of one of the cheesecake fillings onto the center. Roll the tortilla tightly, tucking in the sides to secure the filling.

Heat the Oil
In a deep frying pan, heat the vegetable oil over medium-high heat until hot.

Fry the Chimis
Carefully place the rolled tortillas in the hot oil and fry until golden brown and crispy, about 2-3 minutes per side. Remove and drain on paper towels.

Coat with Cinnamon-Sugar
In a small bowl, mix the granulated sugar and ground cinnamon. While the chimi cheesecakes are still warm, roll them in the cinnamon-sugar mixture until coated.
