Ingredients: 16 oz Cream cheese; 1 cup Granulated sugar; 1 tsp Vanilla extract; 2 large Eggs; 1 tsp Cinnamon; 1 cup Apple pie filling; 1 cup Chocolate chips; 1 cup Mixed berries (fresh or frozen); 6 large Flour tortillas; 2 cups Vegetable oil; 1 cup Granulated sugar; 2 tsp Ground cinnamon

Jim's Mexican Twist on Dessert. Choose from 3 flavours of creamy cheesecake rolled inside tortillas and fried ‘til golden crispy. Cinnamon-Sugar-Coated Caramel Apple, Chocolate Chip, Berry.

In a large mixing bowl, beat together the cream cheese, granulated sugar, and vanilla extract until smooth. Add eggs one at a time, mixing well after each addition. Divide the mixture into three equal parts.

Mix the Filling

To one part, fold in the apple pie filling and cinnamon for the Caramel Apple flavor. To the second part, mix in the chocolate chips for the Chocolate Chip flavor. To the third part, fold in the mixed berries for the Berry flavor.

Flavor the Filling

Lay out each flour tortilla and spoon a generous amount of one of the cheesecake fillings onto the center. Roll the tortilla tightly, tucking in the sides to secure the filling.

Fill the Tortillas

In a deep frying pan, heat the vegetable oil over medium-high heat until hot.

Heat the Oil

Carefully place the rolled tortillas in the hot oil and fry until golden brown and crispy, about 2-3 minutes per side. Remove and drain on paper towels.

Fry the Chimis

In a small bowl, mix the granulated sugar and ground cinnamon. While the chimi cheesecakes are still warm, roll them in the cinnamon-sugar mixture until coated.
