    Curing the Salmon

    In a bowl, mix the black tea leaves, brown sugar, and sea salt. Rub this mixture evenly over the king salmon fillet. Wrap the salmon tightly in plastic wrap and refrigerate for at least 12 hours.

    Preparing the Wontons

    While the salmon is curing, prepare the wontons. Heat oil in a frying pan over medium heat. Fry the wonton wrappers until crispy and golden brown, then drain on paper towels.

    Slicing the Salmon

    After 12 hours, remove the salmon from the fridge and rinse off the curing mixture under cold water. Pat dry with paper towels and slice thinly.

    Assembling the Dish

    On each crispy wonton, layer a slice of avocado, a slice of cured salmon, a slice of pickle, a small dab of wasabi, a few pieces of pickled ginger, and sprinkle with chopped chives and furikake.
