Peanut Butter Feuilletine

    Prepare the Feuilletine

    In a mixing bowl, combine peanut butter, feuilletine, powdered sugar, and a pinch of salt. Mix until well combined. Set aside.

Chocolate Mousse

    Melt the Chocolate

    In a heatproof bowl, melt the dark chocolate over a double boiler. Once melted, let it cool slightly.

    Whip the Cream

    In a separate bowl, whip the heavy cream until soft peaks form. Be careful not to over-whip.

    Prepare Egg Mixture

    In a bowl, whisk the eggs with granulated sugar and vanilla extract until pale and fluffy.

    Combine Mixtures

    Fold the melted chocolate into the egg mixture gently, then fold in the whipped cream until combined. Be careful to retain the airiness.

Chocolate Crumble

    Make the Crumble

    Preheat the oven to 350°F (175°C). In a mixing bowl, combine flour, cocoa powder, softened butter, brown sugar, and a pinch of salt. Use your fingers to mix until crumbly.

    Spread the crumble on a baking sheet and bake for 10-12 minutes until crispy. Let it cool.

Assembly

    Layer the Dessert

    In serving glasses, layer the peanut butter feuilletine at the bottom, followed by the chocolate mousse. Top with chocolate crumble.
