1. Prepare the Aromatics

Finely chop the garlic and shallots. Set aside.

2. Cook the Noodles

Bring a pot of water to a boil. Add ramen noodles and cook according to package instructions (usually 3-4 minutes). Drain and set aside.

3. Fry the Garlic and Shallots

In a large pan, heat sesame oil over medium heat. Add chopped garlic and shallots. Fry until golden brown and crispy, about 3-5 minutes. Remove from heat and set aside.

4. Sauté the Vegetables

In the same pan, add a little more sesame oil if needed. Add bean sprouts and chopped scallions. Sauté for 2-3 minutes until tender.

5. Combine Ingredients

Add the drained ramen noodles to the pan with the sautéed vegetables. Pour in soy sauce and chili oil. Toss everything together until well combined. Season with salt and pepper to taste.

6. Serve

Plate the spicy garlic ramen noodles and top with crispy garlic and shallots, sliced fresh chile, and pickled cabbage. Enjoy!
