Prepare the Sushi Rice
Rinse the sushi rice under cold water until the water runs clear. In a medium saucepan, combine the rinsed rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes. Remove from heat and let it sit covered for 10 minutes.

Season the Rice
In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Fluff the cooked rice with a fork and gently fold in the vinegar mixture. Allow the rice to cool to room temperature.

Make Spicy Mayo
In a small bowl, combine mayonnaise and Sriracha sauce. Adjust the spiciness to taste.

Form the Bites
Wet your hands to prevent sticking. Take a small amount of sushi rice and form it into a bite-sized rectangular shape. Place a small amount of diced tuna on top of each rice piece.

Fry the Bites
In a frying pan, heat vegetable oil over medium heat. Once hot, carefully add the sushi rice bites. Fry until golden brown and crispy, about 2-3 minutes on each side. Remove and let drain on paper towels.

Serve
Drizzle spicy mayo over the crispy bites, sprinkle with chopped chives and sesame seeds if desired. Serve immediately.
