    Prepare the Lamb

    In a large pot or Dutch oven, heat a little oil over medium-high heat. Season the lamb shoulder with salt and pepper.

    Sear the Lamb

    Sear the lamb on all sides until browned, about 5-7 minutes. Remove and set aside.

    Sauté Aromatics

    In the same pot, add chopped red onion, minced garlic, and grated ginger. Sauté until softened, about 3-4 minutes.

    Add Spices and Liquid

    Add Sichuan peppercorns, soy sauce, brown sugar, and water to the pot. Stir to combine.

    Braise the Lamb

    Return the lamb to the pot. Bring to a boil, then reduce heat to low. Cover and simmer for 2-3 hours, or until the lamb is tender.

    Prepare Minted Yogurt

    In a bowl, combine yogurt, chopped mint leaves, and a pinch of salt. Mix well and set aside.

    Serve

    Once the lamb is tender, shred it with two forks and serve with the braising liquid, topped with fresno chili slices and fresh herbs. Add a dollop of minted yogurt on the side.
