Prepare the Shrimp
In a bowl, mix the shrimp with cornstarch, salt, and black pepper. Let it sit for 10 minutes.

Cook the Shrimp
In a large skillet or wok, heat 1 tablespoon of sesame oil over medium-high heat. Add the shrimp and cook for about 2-3 minutes until they turn pink. Remove from the skillet and set aside.

Sauté the Vegetables
In the same skillet, add the remaining tablespoon of sesame oil. Add garlic, blackened chiles, bell pepper, zucchini, and scallions. Stir-fry for about 4-5 minutes until the veggies are tender.

Combine and Serve
Return the shrimp to the skillet, add soy sauce, and peanuts. Stir everything together for another 2 minutes. Serve hot over cooked rice.
