Ribs Marinade and Glaze

Prepare the Marinade
In a bowl, mix together hoisin sauce, soy sauce, honey, rice vinegar, minced garlic, and grated ginger to create the marinade.

Marinate the Ribs
Place the pork ribs in a large resealable plastic bag or a shallow dish. Pour the marinade over the ribs, ensuring they are well coated. Seal the bag or cover the dish and refrigerate for at least 2 hours, preferably overnight.

Prepare the Smoker
Soak the hickory wood chips in water for at least 30 minutes. Preheat your smoker to 225°F (107°C). Drain the wood chips and add them to the smoker box.

Smoke the Ribs
Remove the ribs from the marinade (reserve the marinade for glazing). Place the ribs in the smoker, bone-side down, and smoke for 3 to 4 hours, or until the meat is tender and pulls away from the bone.

Glaze the Ribs
During the last 30 minutes of smoking, brush the reserved marinade over the ribs every 10 minutes for a sticky glaze.

Garnish and Serve
Once cooked, remove the ribs from the smoker and let them rest for 10 minutes. Garnish with chopped chives and sprinkle sesame seeds on top before serving.
