Preparation and Cooking

Prepare the Ribs
Preheat your smoker to 225°F (107°C). Rub the pork ribs with black pepper and set aside.

Make the Hoisin Glaze
In a small saucepan, combine hoisin sauce, honey, soy sauce, minced garlic, ground ginger, and a pinch of black pepper. Heat over medium heat until warm and well combined.

Soak Wood Chips
Soak the hickory wood chips in water for at least 30 minutes before using.

Smoke the Ribs
Place the soaked hickory wood chips in the smoker. Add the ribs and smoke for about 4 hours, basting with the hoisin glaze every hour.

Prepare Rice
While the ribs are smoking, prepare the rice according to package instructions.

Finish the Ribs
Once the ribs are tender and have a nice glaze, remove them from the smoker, let rest for 10 minutes, and then slice.

Serve
Serve the smoked ribs over a bed of cooked rice, garnished with sesame seeds and chopped chives.
