1. Prepare the Tofu
Press the firm tofu to remove excess moisture, then cut into bite-sized cubes.
2. Marinate the Tofu
In a bowl, mix soy sauce, rice vinegar, minced garlic, and minced ginger. Add tofu cubes, tossing gently to coat. Let marinate for at least 15 minutes.
3. Coat the Tofu
In a separate bowl, toss the marinated tofu with cornstarch until well-coated.
4. Cook the Tofu
Heat vegetable oil in a large skillet over medium-high heat. Add the tofu cubes and cook until golden brown on all sides, about 5-7 minutes. Remove from skillet and set aside.
5. Stir-fry the Vegetables
In the same skillet, add bok choy and sliced red chili pepper. Stir-fry for about 3-4 minutes until bok choy is tender yet crisp.
6. Combine Everything
Return the tofu to the skillet with the vegetables. Drizzle sesame oil over the mixture and toss gently to combine. Cook for an additional 2 minutes.
7. Serve
Garnish with chopped green onions and sesame seeds. Serve hot.
