Prepare the Ingredients
Slice the garlic and shallot thinly. Chop the scallions, separating the white and green parts. Rinse the bean sprouts and set aside.

Cook the Ramen Noodles
Boil water in a pot, add the ramen noodles and cook according to package instructions (usually about 3-4 minutes). Drain and set aside.

Fry the Garlic and Shallot
In a large skillet, heat the sesame oil over medium heat. Add the sliced garlic and shallot, cooking until crispy and golden brown. Remove from the skillet and set aside.

Sauté the Vegetables
In the same skillet, add the white parts of the scallions and the rinsed bean sprouts. Stir-fry for 2-3 minutes until just tender. Add the cooked ramen noodles and toss well.

Season the Noodles
Add soy sauce, salt, and black pepper to the noodle mixture. Toss to combine thoroughly. If desired, add sliced red chile for heat.
