Prepare the Noodles
Cook the wide rice noodles according to package instructions until al dente. Drain and set aside.

Cook the Shrimp
In a large skillet or wok, heat a tablespoon of oil over medium-high heat. Add the shrimp and cook until they turn pink and opaque, about 3-4 minutes. Remove from the pan and set aside.

Sauté the Vegetables
In the same skillet, add another tablespoon of oil if needed. Sauté the scallions, jalapeno, and shimeji mushrooms until they soften, about 3-5 minutes.

Combine Ingredients
Add the cooked noodles and shrimp back to the skillet. Toss everything together.

Add Thai Basil
Stir in the thai basil leaves and cook for an additional 1-2 minutes until the basil has wilted.

Serve
Serve hot, garnished with additional basil or jalapeno if desired.
