Prepare the Noodles
Cook the wide rice noodles according to the package instructions. Drain and set aside.

Stir-Fry the Shrimp
In a large skillet or wok, heat a tablespoon of oil over medium-high heat. Add the NC shrimp and stir-fry until they turn pink and are cooked through, about 3-4 minutes. Remove from the skillet and set aside.

Sauté Vegetables
In the same skillet, add another tablespoon of oil. Add the chopped scallions, sliced jalapeno, and shimeji mushrooms. Stir-fry for about 2-3 minutes until the vegetables are tender.

Combine Ingredients
Add the cooked noodles to the skillet along with the shrimp. Toss everything together gently to combine.

Add Thai Basil
Remove the skillet from heat and stir in the Thai basil leaves. Adjust seasoning with salt and pepper to taste.

Serve
Serve the drunken noodles hot, garnished with additional scallions and jalapeno if desired.
