Prepare Shallots
Thinly slice the shallots and place them in a jar. Pour vinegar over the shallots and let them pickle while you prepare the other ingredients.

Prepare Brussels Sprouts
Preheat your oven to 400°F (200°C). Trim the ends of the Brussels sprouts and remove any yellow leaves. Cut them in half.

Roast Brussels Sprouts
In a bowl, toss the halved Brussels sprouts with olive oil, salt, and pepper. Spread them out on a baking sheet and roast for 20-25 minutes, or until crispy and golden brown, stirring halfway through.

Combine Ingredients
Once the Brussels sprouts are done roasting, remove them from the oven and let them cool slightly. In a large bowl, combine the roasted Brussels sprouts, chopped dried apricots, and crushed peanuts.
